Growing up as a Mexican daughter to an immigrant single mother in the United States has shaped my life significantly. My mother married young and was subjected to cultural abuse from her Latin husband and father of her only daughter. After gaining the strength to divorce her abusive husband, she lost the support of her family and was forced to raise me on her own. She was thankfully skilled in finance and took a bank job to find us a small apartment and start college. Witnessing her resilience through such immense challenges instilled in me a deep sense of perseverance, the value of hard work, and the importance of unwavering determination.
Struggling with poverty, being a single mother, and pursuing a Master's degree, my mother never stopped fighting for a better life for us. Seeing her overcome such immense challenges taught me the importance of fighting for what matters most to you. "Success is not impossible even if the odds are against you", she said to me. One of the proudest days of my life is when my mother received her Master's Degree in Business Administration. She is my primary inspiration for my current pursuit of a Master's in Nutrition and Dietetics.
As a future registered dietitian (RD), I plan to become involved in the community by assisting with public nutrition education programs. With my experience growing up in a low-income household, I can better relate to and assist other Latino families with food assistance and education. There are few RDs who speak Spanish, and the patients I have assisted with during clinical rotations were deeply appreciative they could speak to someone in their language. No one should ever feel like a stranger in another country, and I hope to be a strong advocate for others who share my struggle.
Women in STEM and Community Service Scholarship
The interconnected issues of environmental degradation, animal rights, and the ethical implications of our dietary choices deeply resonate with me. Animal agriculture stands as a significant contributor to the environmental crisis, driving deforestation, water pollution, and a substantial portion of greenhouse gas emissions. The intensive farming practices employed in the meat and dairy industries inflict immeasurable suffering upon billions of animals, confining them to cramped and inhumane conditions where they endure physical and psychological distress. Animal agriculture is a major contributor to the emergence of resistant diseases, affecting the safety of both animals and humans.
I believe that a vegan lifestyle offers a powerful solution to these pressing challenges. By embracing a plant-based diet, individuals can significantly reduce their environmental impact, mitigate climate change, and alleviate the suffering of sentient beings. To contribute to a more compassionate and sustainable future, I envision utilizing my skills and education to advocate for widespread adoption of veganism. As a graduate student in Nutrition and Dietetics and future registered dietitian, it is my responsibility to educate myself on the latest nutrition knowledge so I can better support those on plat-based diets.
Firstly, I would prioritize disseminating information about the environmental, ethical, and health benefits of a plant-based diet. This would involve creating engaging and accessible educational materials, such as social media campaigns, presentations, and workshops, designed to effectively communicate the interconnectedness of these critical issues to a broad audience. I have designed and currently operate a free vegan recipe website to assist others on their journey, and am active on social media to support those seeking to follow a vegan diet.
Secondly, I would actively promote the deliciousness and versatility of plant-based foods. This could involve organizing cooking demonstrations, conducting engaging cooking classes, and collaborating with local businesses to increase the availability and accessibility of delicious vegan options. I have offered these services to the community in collaboration with my university, helping others adopt a more plant-centered diet.
Thirdly, I would strive to foster a supportive and inclusive community of individuals who are passionate about animal welfare and environmental sustainability. By connecting like-minded individuals, we can create a powerful network of support and collective action. This also involves actively seeking opportunities to collaborate with local animal sanctuaries, environmental organizations, and other relevant non-profit organizations. By leveraging the collective strength and expertise of these organizations, we can amplify our message, increase our impact, and create a more significant and lasting positive change.

The loss of my uncle to gastric cancer left an indelible mark on my life. Witnessing his courageous battle against the disease was a deeply moving and profoundly challenging experience. I watched as his once vibrant spirit gradually diminished, as the insidious cancer robbed him of his strength and vitality. I witnessed the agonizing toll it took on his body, the debilitating pain, and the gradual fading of his once vibrant personality. Watching him succumb to the disease was heartbreaking, a stark reminder of the fragility of life and the importance of cherishing every moment with loved ones.
The aftermath of his passing brought about significant changes in my life. My mother, shouldering the weight of grief over the loss of her brother, was then faced with another great challenge. As my uncle's power of attorney, she was then given the responsibility of caring for my uncle's adopted son who himself also faced an immense emotional loss. This unexpected role significantly impacted our family dynamics. We welcomed a young person into our home, navigating the complexities of grief, adjusting to new family structures, and providing love and support during a time of profound loss.
Caring for my adopted brother during this difficult period profoundly shaped my character. I learned firsthand the importance of empathy, compassion, and selflessness.
