Over the next five years, I plan to make a real difference in my community and beyond by using what I already do: cooking, entrepreneurship, and technology, to create environmental and social change. I currently run a Jamaican food truck called Keitus Seafood Grill & Jerk where we serve traditional meals like jerk chicken, curry goat, and oxtail. It’s more than just food. It’s culture, family, and connection. But I also see the bigger picture. A lot of communities, especially Black and Brown neighborhoods like mine, deal with limited access to fresh, affordable meals. We rely heavily on processed food, which impacts our health and the environment. I want to change that, and I’ve already started. My vision is to evolve Keitus into an eco-conscious food business that doesn’t just serve meals, but serves a mission. I plan to start by switching to biodegradable containers and reducing single-use plastics across all of our operations. I’m also working on building relationships with local farms to source fresher ingredients and cut down on our food miles. That means fewer emissions from transportation and better meals for our customers. Alongside the food, I want to build a small platform where I can teach young people about healthy cooking, smart grocery shopping, and starting their own food ventures. I already create content on YouTube and social media through my brand BlackoutTW, and I plan to use that same influence to promote wellness, sustainability, and entrepreneurship. I know how to speak to my generation in a way that’s real and relatable. No lectures, just real advice and guidance. Eventually, I want Keitus to sponsor local clean-up days and wellness events that combine food, music, and community action. We’ll host pop-up cookouts where people not only eat, but also learn how to cook healthy versions of their favorite meals, recycle properly, and reduce waste at home. We’ll give out reusable utensils, teach composting basics, and use leftover food scraps for community gardens. Small steps add up, especially when you start young. I’m also building out my automation and tech business, SwiftFlow Automations, where we help small businesses including restaurants save time and cut waste through smart systems. That includes things like automated inventory reminders, appointment scheduling, and digital receipts to cut down on paper. With the right systems, we can help hospitality businesses stay organized and reduce their environmental footprint.
