I’m a passionate advocate for nutrition and its role in preventing chronic diseases. Growing up, I witnessed my father's battle with diabetes, which deeply impacted my life and ignited my desire to make a difference in others' health outcomes. Over the years, I’ve taken action by launching a blog with over 60,000 views, working to improve school nutrition policies, and even creating a children’s book to teach young kids about healthy eating.       I’ve watched disease steal pieces of my father—first his energy, then his eyesight, then the feeling in his legs. Diabetes didn’t just change his life. It changed mine. I was twelve when he started limping. I was thirteen when he couldn’t drive at night because of retinopathy. By fourteen, I was helping him manage insulin, prepping meals, and translating doctors’ instructions he couldn’t fully read anymore. The hardest part wasn’t watching his body change. It was realizing how preventable it all could’ve been, with the right knowledge, earlier. If awarded this scholarship, I would approach patient education in a comprehensive, hands-on way to ensure families make informed nutritional choices. My first priority would be creating clear, accessible materials tailored to the specific medical conditions I’d be addressing. For instance, in the case of diabetes, I would provide information on the role of fiber and whole grains in stabilizing blood sugar. In cancer prevention, I’d emphasize the importance of anti-inflammatory foods and antioxidants. These materials would be grounded in peer-reviewed research, aiming to bridge the gap between scientific findings and practical application. But knowledge alone isn’t enough. I’d organize workshops and seminars for patients and their families to engage with healthcare professionals and nutritionists directly. These interactive sessions would cover meal planning, navigating grocery store aisles, reading nutrition labels, and cooking methods, allowing patients to make nutrition a consistent part of their health strategy. The goal is to make dietary changes manageable and sustainable, not overwhelming. Personalized consultations would also be crucial to ensure that each patient’s unique needs are met. Drawing from my experience translating complex nutrition science for my dad and my blog readers, I would offer one-on-one support where we could delve into their current dietary habits, medical conditions, and goals. By tailoring nutrition plans to their specific circumstances—taking into account cultural preferences, food access, and financial constraints—I would work alongside them to create a practical and achievable path toward better health. To ensure long-term success, I would implement follow-up support. Just as I’ve done in my school district, where I helped create menu changes to improve students’ nutrition, I would provide ongoing check-ins and access to online resources. Virtual support groups, regular consultations, and accountability measures would encourage consistent adherence to dietary changes, offering a network of guidance and encouragement. Through this comprehensive approach, I would empower patients and their families with the tools, knowledge, and ongoing support they need to improve their quantity and quality of life. My experience with nutrition education, from my blog to policy work, has shown me the power of translating science into actionable, understandable advice. As a future Registered Dietitian, I would not only offer medical solutions but work to build a system where nutrition is prioritized as a crucial part of healthcare—one where patients don’t just receive prescriptions but the education and resources to truly thrive. Every family deserves the tools and knowledge to prevent chronic diseases before they take hold, because no child should have to watch their parent suffer from a preventable condition due to a lack of accessible nutritional guidance.
      Vegan Teens Are The Future Scholarship
      “What if that was me?” This haunting thought struck me as I stared at the chicken curry on my plate, memories of cramped cages at my grandparents' farm flashing through my mind. In that moment, my relationship with food changed forever. My journey to veganism wasn't an overnight transformation but a gradual awakening to align my actions with my values. As someone from a culture where food is love, tradition, and identity, this shift challenged not just my diet but my very sense of self. To me, being vegan means minimizing harm to all sentient beings and reducing my environmental impact. The path wasn't easy. Family gatherings became a minefield of confused looks and well-intentioned but hurtful comments. “Are you trying to reject who we are?” my grandmother once asked, her voice laced with hurt. These moments tested my resolve, but they also fueled my determination to bridge the gap between my heritage and my newfound convictions. I threw myself into recreating beloved family recipes with plant-based ingredients. The day my skeptical uncle devoured my vegan biryani, asking for seconds before realizing it was plant-based, felt like a personal triumph. It proved that embracing veganism didn't mean abandoning my cultural roots. It meant evolving them. I continued my advocacy work beyond the family table, working with my school district's nutrition committee to introduce plant-based options like overnight oats to the breakfast menu. This experience reinforced my belief that small, accessible changes can have a lasting impact. Recognizing the need to reach younger minds, I wrote and illustrated a children's book about nutrition and vegan eating, reading it to over 500 elementary students. Their curiosity reaffirmed my belief that education is a powerful tool for change. My blog became another platform for advocacy, reaching over 60,000 viewers, with simple recipes and articles debunking myths about plant-based eating. Each comment from a reader trying plant-based meals for the first time feels like a step toward a more compassionate world. Veganism, to me, is about expanding our circle of compassion while honoring cultural heritage. It’s about creating a world where kindness is easy, delicious, and accessible. Through further education in nutrition and public policy, I aim to advance the vegan movement by advocating for plant-based options in schools, promoting policies that support sustainable farming, and inspiring others through platforms like my blog and children's book.
