    Amber D. Hudson Memorial Scholarship
    Throughout my life, I have witnessed countless events that prove nutrition's power over our health. However, a personal event that truly inspired my love for nutrition, and inspired me to pursue the dietetics field, was my mother’s experience with breast cancer. In 2021, my mother was diagnosed with stage 1 breast cancer. This life event was difficult for me and my family, due to the physical and emotional toll that this disease had on her. The various doctor appointments, radiation therapies, medications, and surgeries had taken over my mother’s life. My mom began to prioritize a balanced diet because she understood the positive impact nutrition has on the body. I believe that because my mom utilized nutrition knowledge, her body was able to withstand cancer treatments and heal faster. We are so blessed to announce she has been cancer-free for 3 years now! This experience enhanced my belief in the power of nutrition and how greatly our diet is linked to long-term health. The dietetics program at Florida State University has provided me with extensive knowledge and expertise in nutrition! I am honored to have graduated with my B.S. in dietetics in Spring of 2024. I have been accepted to the nutrition and food science M.S. degree program in addition to the dietetic internship at FSU; I am on track to begin my graduate degree this August! My courses educated me on nutrition education, counseling, medical nutrition therapy, metabolism, food science, and more. This education emphasized the importance that nutrition education carries for positive disease prognosis. The first step to change is the education phase; raising awareness of nutrition issues has the potential to change lifestyles for the better in people all around the world. I am personally passionate about educating and counseling individuals who suffer from eating disorders. However, I would be overjoyed to counsel and educate all client types! During 2022-2023, I had the opportunity to work as a dietetic technician at Canopy Cove Eating Disorder Treatment Center. I was responsible for planning client meals, facilitating meals, providing client support, and prepping meals. I fell in love with this job and knew it was my passion to help individuals who struggle with their relationship with food. I built connections with the clients through kindness and education; watching them overcome their condition was truly inspiring. As a registered dietitian, I will be able to educate individuals that their nutrition and diet can transform their lives, and that there is always hope for a bright future. When I achieve my RDN credentials, I hope to provide nutrition counseling services for those in need and create physical or online education materials. I am emotionally moved by Amber D. Hudson’s battle with cancer, and I offer my condolences to all family members and friends who were affected. It is inspiring that the Hudson family is offering their generosity toward aspiring nutrition professionals in honor of Amber. The opportunity to receive the funds of this scholarship would assist me in my educational and professional endeavors. Due to the demanding nature of graduate school and the full-time dietetic internship, I will not be able to earn sufficient funds to support myself financially. With the support of the Amber D. Hudson Memorial Scholarship, I will be one step closer to achieving my aspirations of helping others in the nutrition education field!
