Troy James Carlson Sr. was a beloved father who passed away on November 10th, 2024, after years of battling cancer. Troy was a father of 8 children. He was diagnosed with cancer in 2018 and went into remission and then in April, 2023, it came back more aggressively. Troy had a rare form of cancer called Spindle Cell Carcinoma. In 2022, they removed Troy’s larynx, making it so he could no longer talk. In June of 2024, the cancer had spread to the other side of his throat and became a huge tumor that was inoperable. Troy did 4 rounds of chemotherapy (the last round was an experimental chemo) and 2 rounds of radiation. On Troy’s very last good day, he made sure he cooked out on his grill!

Before he got sick, Troy was a chef. He loved cooking almost as much as he loved his family and his talent and passion brought joy to many people. Many young people share Troy’s ambition and connection to cooking but students often don’t receive the encouragement they need to follow their dreams.

This scholarship seeks to honor the life of Troy James Carlson Sr. by supporting students who share his love for the culinary arts.

Any high school junior or senior, undergraduate student, or student in a vocational program may apply for this scholarship if they’re in culinary school, planning to attend, or if they attended a BOCES program. Applicants must have at least a 2.75 GPA.

My Name is Nickola Whitford. I live in Randolph, New York. I attend Randolph Jr/Sr High School along with boces at the Ellicottville. Where I learn the trade of Culinary Arts with Chef Susan Brushingham. I've always loved cooking even as a little girl helping my mom in the kitchen like baking for family members, helping with dinner even if it was just getting the ingredients my mom needed. I've always known cooking was for me because even as I was just helping in the smallest ways I always loved it. As I got older and my mom let me do more in the kitchen I started to realize I was getting good in the kitchen. Once I realized I'm about to be a junior then I can go to boces and learn more about this hobby I loved doing and see if I'm good enough to do this as a full time job. Boces tours came around and I knew Culinary Arts was the only class I wanted to see. When I heard about the class and found out more about the class I knew I needed to be in that class for my junior/senior year. Once I got the word I finally got in the class I started jumping up in down in my living my room. I remember that because my dad came in from outside to ask me what was going on he heard yelling. My first day of Culinary Arts when we were actually in the kitchen I knew this is what I wanted to do with the rest of my life. Yes is that a little early but not for a girl that has been cooking for fun her whole life. My time in Culinary Arts I've accomplished being at the top of my class, an internship at The Sliver Fox Steakhouse in Ellicottville, getting accepted into Alfred State for there Culinary Arts program. My goal with Culinary Arts is to become a head chef in a 5-Star restaurant. Once I decide to become a mom start looking for a job to teach Culinary Arts to teenagers who are wanting to learn about the trade and hopefully make them love it just as much as I do. I want teenagers to be able to have the opportunity to love the art of culinary like I do and not just use the class as an easy grade to get out of normal school. I would very much appreciate this scholarship with my journey into the culinary field. I thank you for even the opportunity to apply for this. All my thanks Nickola Whitford

The winner will be publicly announced on Jun 28, 2025. Prior to the announcement date, we may contact finalists with additional questions about their application. We will work with donors to review all applications according to the scholarship criteria. Winners will be chosen based on the merit of their application.

How will the scholarship award be paid?

Award checks will be sent to the financial aid office of the winner's academic institution or future academic institution in their name to be applied to their tuition, and in the name of their institution (depending on the school's requirements). If the award is for a qualified educational non-tuition expense, we will work with the winner directly to distribute the award and make sure it goes towards qualified expenses.

How will my scholarship application be verified?

Before we award the scholarship, the winner will be required to confirm their academic enrollment status. Depending on the circumstances, verification of Student ID and/or their most recent transcript will be required.
